Marj's Rosemary Shortbread

Bake 325 degrees in a 8 or 9 “ pan

2 cups flour

1/3 cup granulated sugar

1 Tbs. chopped Rosemary

1 tsp. and pinch of salt

2 sticks of unsalted, cold butter, cut into chunks

(1-2 tsp. dark honey, optional)

Pulse 1st 4 ingredients in a food processor.

Add butter (and honey) pulse to fine crumbs.

Pulse a few more times until crumbs start to come together. Do not over process.

Press dough into uncreased pan. Prick with fork. Bake 35-40 min. Cool on wire rack. 

 

Tortellini Soup

 Brown a 1 pound package of medium ground sausage. 

Add into pan 1/2 chopped onion, 2 chopped peppers and 2 small squash chopped. 

You can use chopped garlic as well and saute with the sausage for 2-3 minutes. 

Add in 32 ounces of chicken broth and 1 15 ounces can of diced tomatoes.

Using the toothpick method, add in basil. oregano and rosemary to taste. Cook 10-15 minutes or until the vegetables are soft. 

Add in a bag of tortellini and simmer for 4-5 more minutes until the pasta is cooked to preference.  Serve and enjoy!
